Allulose is a low-calorie “rare sugar” with the same clean, sweet taste you expect from sugar. A monosaccharide, or simple sugar, allulose is absorbed by the body, but not metabolized so it is nearly calorie-free. Researchers found that while some allulose is absorbed, it has no impact on blood glucose levels. Though technically it is defined as a carbohydrate, the body does not recognize it as such.
